Eggs Florentine (a Miraval Recipe)

Breakfast is the most important meal of the day, and I love a good breakfast!  There are so many wonderful options for breakfast at Destination Spas, so why not incorporate that into a healthy, spa-inspired lifestyle at home?

I love my spa cookbooks.   It seems impossible for me not to  get a spa cookbook – if they have it, I buy it.   I was recently flipping through for some inspiration of meals to make for the week.  And I came across a recipe for Eggs Florentine from the Mindful Eating cookbook.

Interestingly enough, I never actually had this at Miraval.  During my stays there (read about it here).  Miraval usually features is Cactus Restaurant Omelet and its Huevos Rancheros, both of which are featured in its cookbook.  But they also have daily breakfast specials, and I seemed to order those most often, which is why I never really had the Eggs Florentine there.  Luckily though, I have the cookbook and can try recipes at home.  Truly Spa-Inspired Breakfast at home!

So the recipe struck my fancy, and even better, I also happened to have all the ingredients on hand, and it was the weekend and so it all came together to make a nice breakfast to start an enjoyable and relaxing weekend.

Spinach Chiffonnade

I think the most time consuming part is to actually prepare the spinach.  But while that is happening you can have the primary ingredients of wine, garlic and shallots simmering.

The sauce mixture incorporates the wine, garlic and shallots with dairy and cheese to form a very cream base.  While this cooks, you can bring your water to a boil for poached eggs.

The recipe itself is just for the sauce topped with a poached egg, but with the egg and the sauce, I think it needs some bread. I think though it wouldn’t be too far to layer the sauce and egg on a half slice of multigrain bread for a take on eggs Benedict.  Or go all out and pair it with an english muffin and some prosciutto for new flare on eggs Benedict for a nice weekend brunch.
